TURKISH DELIGHT BISCOTTI
- ¼ cup butter
- ¾ cup sugar
- ¼ cup almond paste
- 3 eggs
- 1 tsp vanilla extract
- 3 cups flour
- 1 tsp baking powder
- pinch of salt
- ¾ cup pistachios, shelled, raw
- ¾ cup almonds, sliced, toasted
- ¾ cup Yotti’s Rose Turkish Delight Tots
Beat together butter, sugar and almond paste until fluffy. Beat in eggs and vanilla. Add flour, baking powder and salt. Blend until smooth. Fold in nuts and Yotti’s Rose Turkish Delight Tots.
Divide dough in half and shape each into a log about 7.5 cm wide and 2 cm high. Bake for 25 minutes in a preheated 176°C oven. Let cool for 10 minutes then cut diagonally into slices. Put slices back into oven at 135°C and toast each side for 10 minutes.
